Herb-Pepper Steak
A straightforward steak method with garlic, herbs, black pepper, and lemon. Use a skillet or grill and rely on an instant-read thermometer for doneness.
Method
- Pat steaks very dry. Season evenly with salt and pepper and let sit at room temperature for about 15 minutes while the pan or grill heats.
- Heat a heavy skillet over medium-high until hot; add oil. Sear steaks without moving until a deep crust forms, then turn.
- Add garlic, herbs, and butter if using. Baste briefly while cooking to your preferred internal temperature.
- Transfer to a board and rest 5–10 minutes before slicing.
- Finish with lemon and any resting juices. Taste before adding more salt.
Substitutions
Use mushrooms or thick cauliflower steaks for a meatless version, adjusting cook time as needed.
Storage & reheating
Refrigerate cooked steak in an airtight container up to 3 days. Reheat gently or serve chilled in salads; repeated high heat can toughen it.
